- 1 baguette

Prepare
- 2 scallions, finely chopped
- 1 tbsp fresh ginger, grated peeled
- Chop fresh mint
- Chop cilantro
- red chile, thinly sliced

Step 1.
Preheat the oven to 450°F. In a large bowl, combine 1 pound ground pork, 2 finely chopped scallions, 1 tablespoon grated peeled fresh ginger, and ½ teaspoon each kosher salt and pepper. Mix until just combined.

Drop 16 spoonfuls (about 2 tablespoons each) of the pork mixture onto a rimmed baking sheet, spacing them evenly. Roast until browned and cooked through, 8 to 10 minutes.

While the meatballs roast, cut ½ seedless cucumber into matchsticks. Cut 1 baguette crosswise into 4 pieces, then split each piece horizontally.

Transfer the cooked meatballs to a bowl and toss with ½ cup sweet chili sauce until coated.

Spread the cut sides of the baguette pieces with mayonnaise. Fill each with meatballs, cucumber matchsticks, and desired amounts of chopped fresh mint, cilantro, and thinly sliced red chile. Serve immediately.
