  • 4 tbsp vegetable oil
  • 1 frozen crushed garlic
  • 1 frozen crushed ginger
  • 4 lamb rump steaks
  • 1 tbsp garam masala
  • 1 tbsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tbsp salt
  • 1 tbsp sugar
  • 4 ginger biscuits

Prepare

  • 1 onion, roughly chopped
  • Crush 3 garlic cloves
  • 1 fresh ginger, peeled and grated

Let's Cook

  1. Step 1.

    Preheat the grill/broiler to high and line a grill pan with foil.

  2. Step 2.

    Heat 3 tablespoons of the vegetable oil in a large non-stick frying pan over medium heat. Add the chopped onion, crushed garlic, and grated ginger. Cook, stirring occasionally, for 6–8 minutes, until the onions are soft and golden.

  3. Step 3.

    While the onions are cooking, heat the remaining 1 tablespoon of oil in a separate frying pan over medium heat. Add the lamb rump steaks and cook for 2–3 minutes on each side, until browned. Transfer the browned steaks to the rack of the prepared grill pan.

  4. Step 4.

    Add the garam masala, ground coriander, ground cinnamon, salt, and sugar to the pan with the cooked onions. Cook, stirring continuously, for 1 minute until fragrant. Transfer the spiced onion mixture to a food processor, crumble in the ginger biscuits, and process to a thick, smooth paste.

  5. Step 5.

    Divide the biscuit-onion paste evenly among the lamb steaks on the grill pan, spreading it in an even layer over each steak. Grill/broil the steaks for 4–5 minutes, until the lamb is bubbling and the paste has formed a golden crust. Serve hot.
