Gather these ingredients - no prep needed yet.

  • 1 yeast
  • 1 tbsp sugar
  • 3 cup flour
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1/4 cup brown sugar
  • 1 tbsp cinnamon

Prepare

  • 3 1/2 tbsp melted butter, divided
  • 1 cup powdered sugar, for frosting

Let's Cook

  1. Step 1.

    In a small bowl, combine 1 packet yeast and 1 tablespoon sugar with 1/4 cup lukewarm water. Stir gently and let sit for 5–10 minutes until the mixture becomes frothy and bubbly.

  2. Step 2.

    In a large mixing bowl, whisk together 3 cups flour and 1/2 teaspoon salt.

  3. Step 3.

    Once the yeast mixture is bubbly, stir in 3/4 cup milk and 1 1/2 tablespoons of the melted butter until combined.

  4. Step 4.

    Pour the wet ingredients into the flour mixture and stir until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 5–7 minutes until smooth and elastic.

  5. Step 5.

    Place the dough in a greased bowl, turning once to coat. Cover with a damp tea towel and let rise in a warm place for about 1 hour, or until doubled in size.

  6. Step 6.

    While the dough rises, in a small bowl, mix together 1/4 cup brown sugar and 1 tablespoon cinnamon. Set aside.

  7. Step 7.

    Punch down the risen dough and turn it out onto a floured surface. Roll the dough into a rectangle about 1/4-inch thick.

  8. Step 8.

    Brush the dough with the remaining 2 tablespoons melted butter, then sprinkle evenly with the cinnamon-brown sugar mixture.

  9. Step 9.

    Starting from a long edge, roll the dough tightly into a log. Pinch the seam to seal. Using a sharp knife, cut the log into 12–13 rounds, each about 1 inch thick.

  10. Step 10.

    Place the rolls on a greased baking sheet, spacing them about 1 inch apart. Cover loosely with a towel and let rise for 30 minutes until puffy.

  11. Step 11.

    Preheat the oven to 350°F. Bake the rolls for 20–30 minutes, until golden brown on top.

  12. Step 12.

    While the rolls bake, make the frosting: In a small bowl, combine 1 cup powdered sugar with 1–2 teaspoons water, stirring until smooth and creamy. Add more water a few drops at a time if needed.

  13. Step 13.

    Remove the rolls from the oven and let cool for 5 minutes. Drizzle the frosting over the warm rolls before serving.
