Yield varies A transformative, French spread made from cheese scraps that might otherwise be thrown away or neglected—an especially useful recipe for the day after a party. If using blue cheese, do not let it exceed one-quarter of the total amount. Keep in mind that garlic (especially raw) or herbs will intensify the longer the spread sits, so use a light hand. Serve with crusty bread and crudités.

Ingredients

  • Cheese scraps, rinds removed, any hard cheeses grated
  • 1
    • 4 large heads garlic
    • 2 tablespoons olive oil
    • Garlic cloves, unpeeled, excess skin removed
    Sub-recipe steps
    1. Preheat the oven to 400°F. To expose the cloves, cut the top third from: 4 large heads garlic
    2. Drizzle over the cut portions of the heads: 2 tablespoons olive oil
    3. Wrap each head tightly in foil, place in a baking dish, and bake until the garlic is soft and tender, about 45 minutes. Serve hot or at room temperature.
    4. QUICK PAN-ROASTED GARLIC CLOVES
    5. This method produces a firmer result with a toasty flavor. Pan-roasting is ideal for mellowing out garlic before using in salsas or uncooked table sauces like Habanero-Citrus Hot Sauce.
    6. Place in a heavy skillet over medium heat: Garlic cloves, unpeeled, excess skin removed
    7. Let the skin of the cloves blacken, and then turn them. Repeat until the cloves have charred spots on all sides, about 15 minutes. Transfer to a cutting board and let cool.

  1. Step 1.

    Pulse in a food processor until finely ground: Cheese scraps, rinds removed, any hard cheeses grated

  2. Step 2.

    Add, as desired: (Garlic, raw or roasted); (Herbs, fresh or dried); (Black pepper); (Red pepper flakes); (A splash of Cognac)

  3. Step 3.

    With the food processor running, gradually add enough: Dry white wine

  4. Step 4.

    for the cheese mixture to become spreadable, but not runny, in texture. If the spread gets too firm as it sits, return it to the food processor and add more wine. Serve right away or cover and store refrigerated for up to 1 week.
