Let's Cook

  1. Step 1.

    In a plastic bag, combine 1 cup cornmeal, ¼ cup all-purpose flour, 3 teaspoons seafood seasoning, 1 teaspoon onion powder, and 1 teaspoon garlic powder. Shake until well mixed.

  2. Step 2.

    Coat each tilapia fillet with ½ teaspoon yellow mustard (3 teaspoons total), then place one fillet at a time into the bag. Shake to coat evenly, then remove and set on a plate. Repeat with remaining fillets.

  3. Step 3.

    In a large skillet, heat 1½ cups vegetable oil over medium-high heat until it reaches about 360°F (use a thermometer if available). Carefully place the coated fillets one at a time into the hot oil. Fry, flipping once, until the breading is golden brown and the fish is cooked through, 5 to 7 minutes per side. Transfer the cooked fillets to a paper-towel-lined plate to drain excess oil. Repeat with remaining fillets.

  4. Step 4.

    Spread spicy tartar sauce on each of the 12 slices of white bread. Place shredded lettuce on 6 of the slices, then top with a fried tilapia fillet. Cover with the remaining bread slices. Serve with hot sauce on the side.
