Crispy fried fish fillets or chunks, either deep-fried or shallow-fried until golden brown. Serve very hot with tartar sauce, chutney, raita, or cocktail sauce.

- Fillets or chunks of fish, or cleaned small fish
- 3 inches vegetable oil such as peanut or canola
- 1 Beer Batter, Tempura Batter, Pakora Batter, Flour Coating, or Bound Bread Crumb or Cracker Coating (opens in new tab)

Heat to 370°F in a deep-fryer, deep heavy pot, or Dutch oven over medium-high heat: 3 inches vegetable oil such as peanut or canola

Dip the fish in: Beer Batter, Tempura Batter, Pakora Batter, Flour Coating, or Bound Bread Crumb or Cracker Coating

Gently lower the fish into the hot fat and fry, without crowding, until golden brown, 5 to 8 minutes. Drain on paper towels or newspaper. Serve very hot, with: Tartar Sauce, Cilantro-Mint Chutney, Raita, Becker Cocktail Sauce, or the sauce for Pla Raad Prik

Heat to 370°F in a heavy skillet with high sides or a Dutch oven: ¾ to 1 inch vegetable oil such as peanut or canola

Dredge the fish in: Flour Coating or Bound Bread Crumb or Cracker Coating

Fry, without crowding, until golden brown on both sides, 5 to 8 minutes, turning once. Drain on paper towels or newspaper. Serve very hot, as for version I.
