- 680 g chicken
- salt
- pepper
- 2 pinch ginger
- flour
- 59.1 ml butter or poultry fat

Step 1.
Season the 1½ lb chicken pieces with salt, pepper, and 2 pinches of ginger on all sides.

Dredge the seasoned chicken in flour, coating each piece evenly and shaking off excess.

Heat ¼ cup butter or poultry fat in a large frying pan over medium-high heat until hot and shimmering.

Place the floured chicken pieces in the hot fat in a single layer, being careful not to crowd the pan. Fry until golden brown on one side, about 5–7 minutes, then flip and cook until the other side is browned and the chicken is cooked through (internal temperature reaches 165°F), about 5–7 minutes more. Adjust heat if needed to prevent burning.

Transfer the fried chicken to a paper towel-lined plate to drain briefly. Serve immediately or pack into picnic baskets with plenty of napkins.
