Fresh Strawberry Meringue Or Dacquoise

One 9-inch cake; about 12 servings Crunchy and creamy, sweet and tart, this is a grand dessert. Have your way with it: Vary the nuts in the dacquoise, omit the chocolate coating on the layers, or substitute whole raspberries for the sliced strawberries.

    1. Prepare: French Meringue, Swiss Meringue, or Italian Meringue
    2. To make free-form meringue shells, simply spoon heaps of meringue onto a baking sheet lined with parchment paper, making a depression in the center of each one with the back of the spoon.
    3. To form meringue layers with a spatula, divide the meringue evenly among the circles and spread into rounds with an offset spatula, making sure that the thickness of the meringue is as uniform as possible. Neaten the edges of each round by tracing around them with your finger, if desired.
    4. To form meringue layers with a pastry bag, scrape the meringue into a large pastry bag fitted with a ⅜- to ½-inch plain tip. Starting in the center of each circle, pipe a widening spiral of meringue until each round is covered with a coiled rope of meringue.
    5. Bake until completely dry but not at all browned, up to 2 ½ hours. To check for doneness, remove a test shape from the oven and let it cool for 5 minutes. If it is dry and crisp to the bite, then meringues of similar size are done. Larger meringues can also be tested by probing with the tip of a sharp paring knife. If the center of the meringue seems only slightly sticky, it will crisp as it cools.
    6. Let cool in the turned-off oven to ensure dryness; an overnight rest in an oven with a pilot light is the sure way to get perfect meringues. If not using immediately, store airtight for several weeks. Do not refrigerate or freeze. Meringue layers are fragile. Cut the excess parchment paper from around each one and store still attached to the paper for protection. To remove it from the parchment, slide a slender metal spatula under each layer.

    • 6 ounces semisweet or bittersweet chocolate (60 to 70% cacao), coarsely chopped
    • ⅓ cup coffee or water
    • (Pinch of salt)
    • 6 tablespoons (¾ stick) unsalted butter, cut into small pieces
    Sub-recipe steps
    1. Melt in a double boiler, a heatproof bowl set over simmering water, or in a microwave on 50 percent power in 20-second bursts, stirring often just until smooth: 6 ounces semisweet or bittersweet chocolate (60 to 70% cacao), coarsely chopped; ⅓ cup coffee or water; (Pinch of salt)
    2. Remove from the heat. With a silicone spatula, stir in 2 or 3 pieces at a time: 6 tablespoons (¾ stick) unsalted butter, cut into small pieces
    3. Continue to stir—do not beat—until perfectly smooth.
    4. For a pourable glaze, let cool at room temperature, stirring occasionally, until the mixture reaches 90°F. For frosting, let cool further until spreadable. If the frosting becomes too stiff, set the bowl in a larger pan of hot water and stir until softened; or remelt and then cool to 90°F for use as a glaze. This keeps for up to 3 days at room temperature or for up to 3 weeks refrigerated.
  • 2 cups (460g) heavy cream or 1 cup (230g) heavy cream and 1 cup (230g) crème fraîche
  • 1 to 2 tablespoons (25g) sugar
  • 1 teaspoon vanilla
  • ¾ cup sliced almonds, toasted

Gather these ingredients - no prep needed yet.

  • 1 1 ½ recipes Baked Meringue or Dacquoise, made with almonds
  • 2 pints strawberries, hulled
  • 1 1 cup Bittersweet Chocolate Glaze
  • 2 cups (460g) heavy cream or 1 cup (230g) heavy cream and 1 cup (230g) crème fraîche
  • 1 to 2 tablespoons (25g) sugar
  • 1 teaspoon vanilla
  • ¾ cup sliced almonds, toasted

Let's Cook

  1. Step 1.

    Prepare and bake three 9-inch layers using: 1 ½ recipes Baked Meringue or Dacquoise, made with almonds

  2. Step 2.

    Choose 12 of the best-looking berries from: 2 pints strawberries, hulled

  3. Step 3.

    Dip them halfway into: 1 cup Bittersweet Chocolate Glaze

  4. Step 4.

    Set on a cookie sheet lined with wax or parchment paper and refrigerate. Spread both sides of each meringue or dacquoise layer with the remaining glaze. Set the coated layers on wax or parchment paper and refrigerate to set the chocolate.

  5. Step 5.

    Slice the remaining strawberries. Whip until thickened: 2 cups (460g) heavy cream or 1 cup (230g) heavy cream and 1 cup (230g) crème fraîche

  6. Step 6.

    Add and beat just until almost stiff: 1 to 2 tablespoons (25g) sugar; 1 teaspoon vanilla

  7. Step 7.

    Fold the sliced berries into 2 cups of the whipped cream. Spread 1 chocolate-coated layer with about half of the strawberry filling. Top with a second layer. Spread with the remaining filling. Top with the third layer. Frost the top and sides of the stack with the plain whipped cream. Press into the sides: ¾ cup sliced almonds, toasted

  8. Step 8.

    If there is any cream remaining, use a pastry bag fitted with a medium star tip to pipe a border of rosettes around the top edge of the cake. Decorate the top with the chocolate-coated strawberries. Refrigerate for at least 2 and for up to 4 hours before serving.
