1 serving You’ll notice that this formula is similar to the Tom Collins, but with Champagne instead of club soda. Oh, what a difference those French bubbles make!

Ingredients

Servings:
  • 1 ounce Cognac or gin
  • 2 teaspoons lemon juice
  • 1
    • 2 cups sugar
    • 1 cup water
    Sub-recipe steps
    1. Combine in a saucepan: 2 cups sugar; 1 cup water
    2. Cook over low heat, stirring occasionally, until the sugar has completely dissolved. Let cool, then chill until needed. Rich simple syrup will keep in the refrigerator for 6 months; a weaker one-to-one syrup will keep for 1 month.
  • 2 ½ to 3 ounces brut Champagne
  • A lemon twist

Let's Cook

  1. Step 1.

    Fill a cocktail shaker with ice cubes. Add: 1 ounce Cognac or gin; 2 teaspoons lemon juice; 1 teaspoon Simple Syrup

  2. Step 2.

    Shake until well chilled, about 12 seconds. Strain into a chilled Champagne flute and add: 2 ½ to 3 ounces brut Champagne

  3. Step 3.

    Garnish with: A lemon twist
