FOUR Brothers BEEF Curry
A fragrant Thai-style beef curry with new potatoes, coconut cream, and aromatic spices. Ready in 30 minutes, this dish features tender sirloin strips in a rich, savory sauce.

- 750 g new potatoes

Step 1.
Cut the unpeeled new potatoes in half. Cook them in a large saucepan of boiling water for 10–12 minutes until tender. Drain and leave in the colander.

Step 2.
While the potatoes cook, remove the tough outer leaves from the lemongrass and cut off the ends of the stalks. Peel the garlic and cut the top off the red chilli. Place the lemongrass, garlic, and chilli into a mini food processor and blend into a paste.

Step 3.
Heat the groundnut oil in a large, shallow saucepan over medium heat. Add the cardamom pods, star anise, cinnamon stick, and cloves. Stir-fry for 30 seconds until fragrant, then add the spice paste and stir-fry for 10 seconds until it releases its fragrance. Pour in the coconut cream, tomato purée, fish sauce, and sugar. Mix well and let it simmer gently.

Step 4.
Slice the sirloin steaks into strips about 5cm/2in wide. Add the beef strips to the pan with the sauce, then carefully tip in the cooked potatoes and mix well. Bring to a boil, then cover, reduce the heat to low, and simmer gently for 5 minutes. Remove the lid and cook for another 10 minutes, stirring occasionally, until the beef is just cooked through and the sauce has thickened.

While the steak cooks, cut the lime into quarters. Serve the curry with the lime wedges on the side to freshen it up.
