This recipe provides two fillings for filled cookies: a fruit-and-nut filling with dried fruit and citrus, and a coconut-lime filling. Both are quick to prepare and can be used in various cookie recipes.

  • 1 cup chopped raisins, dried figs, dates, or apricots
  • 6 tablespoons (70g) sugar
  • 5 tablespoons (75g) water
  • Finely grated zest of 1 lemon or orange
  • 1 tablespoon (15g) lemon juice or ¼ cup (60g) orange juice
  • 1 tablespoon (15g) unsalted butter
  • ⅛ teaspoon salt
  • 1 ½ cups flaked or shredded coconut, chopped
  • ½ cup packed (115g) brown sugar
  • 1 large egg, lightly beaten
  • 1 tablespoon (10g) all-purpose flour
  • Finely grated zest and juice of 1 lime

Let's Cook

  1. Step 1.

    Combine in a small heavy saucepan and bring to a boil: 1 cup chopped raisins, dried figs, dates, or apricots; 6 tablespoons (70g) sugar; 5 tablespoons (75g) water; Finely grated zest of 1 lemon or orange; 1 tablespoon (15g) lemon juice or ¼ cup (60g) orange juice; 1 tablespoon (15g) unsalted butter; ⅛ teaspoon salt

  2. Step 2.

    Boil, stirring, until thickened. Cool before using.

  3. Step 3.

    Combine in a bowl: 1 ½ cups flaked or shredded coconut, chopped; ½ cup packed (115g) brown sugar; 1 large egg, lightly beaten; 1 tablespoon (10g) all-purpose flour; Finely grated zest and juice of 1 lime

  4. Step 4.

    Use about ¾ cup drained store-bought mincemeat or prepare half the amount of filling for Mock Mincemeat Pie.
