Elotes (Mexican Grilled Corn)

Elotes (Mexican Grilled Corn)

Cuisine:Mexican

Course:Side Dish

10m prep 10m cook 20m ready

4 servings This is one of our favorite corn dishes. For a less messy eating experience, simply cut the kernels off the grilled ears, toss in a bowl with the other ingredients, and sprinkle with chopped cilantro (you may call the dish esquites).

Ingredients

Servings:
  • 1
    • ears of corn
    Sub-recipe steps
    1. Soak ears of corn in their husks in water for 2 hours before grilling. Do not worry about removing the silks; they will come off later with the husks. Lay the ears in the husks directly over a medium-hot grill fire. Cook, turning the ears with a pair of tongs so they roast evenly on all sides, about 20 minutes. Or roast the corn in their water-soaked husks in a 450°F oven for 8 to 15 minutes. Serve as for Corn on the Cob.
  • 2 tablespoons mayonnaise or Mexican crema (½ cup total)
