Prepare

  • 44.4 ml vegetable oil, divided
  • 1 large sweet onion, finely chopped
  • 4 clove garlic, finely chopped
  • 680 g mild Italian sausage, casings removed
  • 3 jalapeños, seeded and chopped
  • 1 large red bell pepper, seeded and chopped

Let's Cook

  1. Step 1.

    Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the finely chopped sweet onion and sauté until golden, about 5 to 6 minutes. Add the finely chopped garlic and cook for another minute, stirring frequently. Transfer the onion-garlic mixture to a bowl and set aside.

  2. Step 2.

    Season the ground beef with salt and freshly ground black pepper to taste. Heat the remaining 2 tablespoons of vegetable oil in the same wok over medium-high heat. Add the seasoned ground beef and cook, stirring occasionally, until browned, about 5 minutes. Transfer the browned beef to a separate bowl.

  3. Step 3.

    Add the Italian sausage (casings removed) to the wok and cook over medium-high heat, breaking it up with a spoon, until browned, about 5 minutes. Return the reserved onion-garlic mixture and browned ground beef to the wok.

  4. Step 4.

    Add the seeded and chopped jalapeños, seeded and chopped red bell pepper, crushed tomatoes, tomato paste, lager-style beer, ground cumin, chili powder, sweet paprika, dried oregano, Tabasco sauce, Worcestershire sauce, and brown sugar to the wok. Stir well to combine all ingredients.

  5. Step 5.

    Cover the wok and reduce the heat to medium-low. Let the chili simmer for 2 hours, stirring every 20 minutes or so to prevent sticking. The chili will thicken and the flavors will meld. Serve hot with tortilla chips, sour cream, guacamole, grated cheese, and chopped red onion as desired. The chili can be made up to two days ahead and stored covered in the refrigerator.
