These are light and fluffy dumplings made with a simple batter of flour, baking powder, milk, and butter. They are dropped onto simmering stews or broths and cooked until tender.

Gather these ingredients - no prep needed yet.
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ¾ teaspoon salt
- 1 cup milk
- 3 tablespoons butter
- (¼ cup finely chopped parsley or 2 tablespoons minced chives)

Whisk together in a bowl: 2 cups all-purpose flour; 1 tablespoon baking powder; ¾ teaspoon salt

Bring just to a simmer in a small saucepan: 1 cup milk; 3 tablespoons butter

Add to the dry ingredients. Stir with a fork or briefly knead until the mixture comes together. If desired, mix in: (¼ cup finely chopped parsley or 2 tablespoons minced chives)

Gently drop spoonfuls of the batter on top of a simmering stock, broth, or stew. The dumplings should barely touch. Cover them and simmer gently for 10 minutes. Depending on the size of your pot, you may need to cook them in batches. Serve at once.
