Prepare

  • 1 lemon, juiced and zested

Let's Cook

  1. Step 1.

    Cut the dragon fruit lengthwise and scoop out the pulp. Place the pulp in a medium heatproof glass or stainless steel mixing bowl.

  2. Step 2.

    Add the lemon juice and zest, egg yolks, coconut shortening, and coconut sugar to the bowl with the dragon fruit. Whisk to combine.

  3. Step 3.

    Fill a pot with water and bring to a boil over medium-high heat. Place the mixing bowl over the pot, ensuring the bowl nests securely without touching the water. Reduce heat to maintain a gentle simmer.

  4. Step 4.

    Cook the mixture, whisking constantly with a wire whip, until it thickens and turns a pale bright purple, about 20 to 25 minutes. The jam should coat the back of a spoon.

  5. Step 5.

    Remove the bowl from the pot and place it into a larger bowl filled halfway with ice water. Whisk the jam for about 5 minutes until it reaches room temperature.

  6. Step 6.

    Place a piece of plastic wrap directly over the jam, pressing down so the plastic touches the entire surface area. Refrigerate for at least 2 hours to finish cooling and setting.

  7. Step 7.

    Transfer the jam to an airtight container or sanitized glass jar. Store in the refrigerator for up to 1 week.
