A hearty Mexican-inspired steak burrito with seasoned sirloin, roasted sweet potato, black beans, corn, and lime-cilantro rice, finished with avocado, salsa, and a Greek yogurt crema.

Step 1.
Cube sweet potato and roast with paprika and half the olive oil. Season steak with cumin, garlic, chili, salt and pepper. Sear over high heat. Rest for 5–8 minutes before slicing. Mix warm rice with lime and coriander. Warm black beans and corn. Mix Greek yogurt with lime for a protein crema. Warm tortillas. Fill with rice, beans, sweet potato and steak, or serve everything burrito-bowl style. Add avocado and salsa. Finish with protein crema and coriander.
