Let's Cook

  1. Step 1.

    Preheat a large skillet or frying pan over medium heat. Add the smoky turkey, roasted potatoes, and roasted courgette and peppers to the pan. Warm them through, stirring occasionally, until heated to your liking and the potatoes are slightly crisp on the edges, about 5–7 minutes. If the pan seems dry, add a small splash of water or a little oil to prevent sticking.

  2. Step 2.

    While the turkey and vegetables reheat, slice the fresh tomato and cucumber into bite-sized pieces. Arrange them on one side of a serving plate or bowl.

  3. Step 3.

    Once the turkey and vegetables are hot, transfer them to the plate alongside the fresh tomato and cucumber. Spoon the lemon-herb yogurt sauce over the turkey.

  4. Step 4.

    Crumble the feta cheese over the roasted vegetables. Squeeze fresh lemon juice over the entire plate, then sprinkle with chopped parsley and drizzle with olive oil. Serve immediately.
