Step 1.
Roast potatoes with paprika until golden. Char the pepper and corn in a hot pan. Combine parsley, coriander, garlic, vinegar, chili and olive oil for the chimichurri. Season and sear the steak to your preferred doneness. Rest for at least 5 minutes before slicing. Combine black beans, corn, peppers and lime. Plate with crispy potatoes and sliced avocado.
