Cumin Green Beans
A simple Indian side dish of green beans sautéed with cumin seeds, onions, and spices. It pairs well with curries and can be customized with other spice blends.

- 2/3 lbs green beans topped, tailed and cut in half

- 2 tbsp chopped tomatoes
- 1 1/2 tsp salt
- 1 1/2 tsp sugar
Prepare
- 1 brown onion, finely sliced
- 2/3 lbs green beans, topped, tailed and cut in half

Step 1.
Heat 3 tablespoons of vegetable oil in a wide non-stick frying pan with a lid over medium heat. When the oil is hot, add 2 teaspoons of cumin seeds and cook until they turn dark brown, about 30 seconds. Then add the finely sliced brown onion and cook, stirring occasionally, for 6–8 minutes, until softened and lightly golden.

Step 2.
While the onion is cooking, heat the remaining 1 tablespoon of vegetable oil in a separate pan over medium heat. Add the trimmed and halved green beans and fry for 2–3 minutes, stirring occasionally, until they start to blister and turn bright green.

Step 3.
Add the cooked spiced onion mixture to the green beans. Stir in ¼ teaspoon ground turmeric, ¼ teaspoon chilli powder, ½ teaspoon ground cumin, 2 tablespoons chopped tomatoes, 1½ teaspoons salt, and 1½ teaspoons sugar. Add a splash of water (about 2 tablespoons), stir to combine, then cover the pan and cook for 5–6 minutes, until the green beans are tender but still have a slight bite.
