Prepare

  • 1 lb skinless mahimahi or tilapia fillets, cut into 3-inch-long by 1-inch-wide strips

Let's Cook

  1. Step 1.

    In a small bowl, whisk together the mayonnaise, milk, chili powder, and garlic powder until smooth. On a plate, combine the panko breadcrumbs with 4 teaspoons of canola or vegetable oil and ½ teaspoon kosher salt, mixing until the crumbs are evenly coated.

  2. Step 2.

    Working with a few strips at a time, toss the fish strips in the mayonnaise mixture to coat completely, then transfer to the panko mixture, pressing firmly so the crumbs adhere. Place the coated fish strips on a baking sheet in a single layer.

  3. Step 3.

    Preheat the air fryer to 390°F. Spray or brush the air fryer basket with oil. Arrange half of the fish strips in the basket with space between them; if needed, stack strips perpendicularly in a second layer. Air fry until golden and cooked through, 4 to 5 minutes. Repeat with the remaining fish strips.

  4. Step 4.

    Serve the crispy fish in warm flour tortillas with your choice of toppings, such as Pineapple & Red Pepper Slaw, Citrusy Radishes, or Cabbage Slaw.
