Creamy Mashed Cauliflower
4 servings This mashed potato alternative is much quicker and very tasty.
Ingredients
- 1 large head cauliflower (about 2 pounds)
- 1 cup chicken or vegetable stock or broth or water
- 2 garlic cloves, chopped
- ½ teaspoon salt
- ½ cup heavy cream, sour cream, or plain yogurt
- 1 tablespoon butter
- Black pepper to taste
- (Minced chives)
- (1 tablespoon chopped parsley or tarragon)

Cut into florets, cutting off the tough end of the stem of: 1 large head cauliflower (about 2 pounds)

Place in a large saucepan and add: 1 cup chicken or vegetable stock or broth or water; 2 garlic cloves, chopped; ½ teaspoon salt

Bring to a boil, cover, reduce the heat, and simmer until the cauliflower is tender, about 10 minutes. Mash or puree in the pan with an immersion blender or transfer to a food processor and puree, adding: ½ cup heavy cream, sour cream, or plain yogurt; 1 tablespoon butter
