  • ½ teaspoon salt
  • ½ cup heavy cream, sour cream, or plain yogurt
  • 1 tablespoon butter
  • Black pepper to taste
  • (Minced chives)
  • (1 tablespoon chopped parsley or tarragon)

  • 1 large head cauliflower (about 2 pounds)
  • 1 cup chicken or vegetable stock or broth or water
  • 2 garlic cloves, chopped
  • ½ teaspoon salt
  • ½ cup heavy cream, sour cream, or plain yogurt
  • 1 tablespoon butter
  • Black pepper to taste
  • (Minced chives)
  • (1 tablespoon chopped parsley or tarragon)

    Cut into florets, cutting off the tough end of the stem of: 1 large head cauliflower (about 2 pounds)

  2. Step 2.

    Place in a large saucepan and add: 1 cup chicken or vegetable stock or broth or water; 2 garlic cloves, chopped; ½ teaspoon salt

  3. Step 3.

    Bring to a boil, cover, reduce the heat, and simmer until the cauliflower is tender, about 10 minutes. Mash or puree in the pan with an immersion blender or transfer to a food processor and puree, adding: ½ cup heavy cream, sour cream, or plain yogurt; 1 tablespoon butter

  4. Step 4.

    Season with: Black pepper to taste; (Minced chives); (1 tablespoon chopped parsley or tarragon)
