Let's Cook

  1. Step 1.

    Bring a pot of salted water to a boil and cook the 70 g of dry whole-wheat pasta according to package directions until al dente. Reserve a small amount of pasta water before draining, then set the pasta aside.

  2. Step 2.

    While the pasta cooks, heat a large skillet over medium-high heat. Add the 160 g of chicken and minced garlic, cooking until the chicken is browned and cooked through, about 5-6 minutes, stirring occasionally.

  3. Step 3.

    Add the 100 g of sliced mushrooms and 100 g of halved cherry tomatoes to the skillet with the chicken. Cook for 3-4 minutes until the mushrooms soften and the tomatoes begin to release their juices.

  4. Step 4.

    Stir in the 100 g of spinach and cook for 1-2 minutes until wilted.

  5. Step 5.

    Remove the skillet from direct heat and stir in the 60 g of Greek yogurt until a creamy sauce forms. If the sauce is too thick, loosen it with a splash of the reserved pasta water.

  6. Step 6.

    Add the cooked pasta and 10 g of grated parmesan to the skillet, tossing everything together until well coated. Serve immediately.
