  • ¾ teaspoon salt
  • ¾ teaspoon sweet paprika
  • 2 large egg yolks (whites reserved)
  • ½ cup (120g) milk
  • ½ cup canned cream-style corn
  • ¾ cup finely diced deli ham or ½ cup finely diced country ham
  • 2 tablespoons minced onion or green onion
  • 2 tablespoons minced parsley
  • 2 large egg whites
  • 3 inches vegetable oil or shortening

Let's Cook

  1. Step 1.

    Whisk together in a medium bowl: 1 ⅓ cups (165g) all-purpose flour; 2 teaspoons baking powder; ¾ teaspoon salt; ¾ teaspoon sweet paprika

  2. Step 2.

    Whisk together in another medium bowl until well blended: 2 large egg yolks (whites reserved); ½ cup (120g) milk; ½ cup canned cream-style corn

  3. Step 3.

    Whisk the wet ingredients into the flour mixture until barely blended, leaving the batter lumpy. Fold in: ¾ cup finely diced deli ham or ½ cup finely diced country ham; 2 tablespoons minced onion or green onion; 2 tablespoons minced parsley

  4. Step 4.

    Beat until stiff but not dry: 2 large egg whites

  5. Step 5.

    Fold the whites into the batter.

  6. Step 6.

    Heat to 365°F in a deep-fryer, deep heavy pot, or Dutch oven: 3 inches vegetable oil or shortening

  7. Step 7.

    Drop the batter by 3-tablespoon dollops, a few at a time, into the hot oil and fry until golden brown, 3 to 4 minutes. Drain on a rack or paper towels.
