Let's Cook

  1. Step 1.

In a small saucepan, combine the tomato paste and water. Place over medium heat and whisk or stir until the mixture is completely smooth with no lumps of tomato paste remaining.

  2. Step 2.

Add the cayenne pepper, chili powder, salt, cornstarch, vinegar, and dried onion to the saucepan. Stir well to distribute the seasonings evenly into the tomato mixture.

  3. Step 3.

While the sauce begins to heat, chop the jalapeño slices very finely. You can use a food processor, but pulse just until finely chopped—do not puree them into a paste.

  4. Step 4.

Stir the chopped jalapeño into the saucepan. Continue heating the mixture, stirring frequently, until it comes to a boil.

  5. Step 5.

Once boiling, keep stirring constantly for about 3 minutes to prevent scorching and to let the sauce thicken slightly. Then remove the saucepan from the heat.

  6. Step 6.

Let the sauce stand at room temperature until it is completely cool. Transfer to a tightly sealed container and refrigerate until ready to use.
