Let's Cook

  1. Step 1.

In a small bowl, mix together the cinnamon and sugar until very well combined and evenly distributed. Set the mixture aside for sprinkling later.

  2. Step 2.

In a Dutch oven or large skillet, heat the oil over medium-high heat until it reaches 350°F. If you don't have a thermometer, adjust the heat so the oil is hot but not smoking; watch carefully and reduce heat if it begins to smoke.

  3. Step 3.

While the oil heats, quarter the tortillas into wedges. Once the oil is at temperature, carefully place 2 to 4 tortilla quarters into the hot oil, being sure not to overcrowd the pan.

  4. Step 4.

Fry the tortillas on one side for about 30 seconds, or until they are golden brown and crisp. Using tongs, turn them over and fry the other side until golden brown as well.

  5. Step 5.

When both sides are browned, remove the tortillas from the oil and place them on a paper towel-lined plate to drain. Continue frying the remaining tortillas in batches, keeping the oil at a steady 350°F.

  6. Step 6.

While the fried tortillas are still draining and warm, liberally sprinkle them with the cinnamon-sugar mixture so it adheres. These are delicious served with a drizzle of honey.
