-
Step 1.
In the bowl of a stand mixer fitted with the paddle attachment, combine the corn syrup, butter, vanilla, peanut butter, and salt. Mix on high speed until the mixture is creamy and fully homogeneous, scraping down the sides of the bowl as needed.
-
Step 2.
With the mixer running on low speed, slowly add the powdered sugar, a little at a time, until the mixture thickens to the consistency of a soft dough. Stop mixing once it reaches that point to avoid overworking.
-
Step 3.
Remove the dough from the bowl with your hands and press it evenly into a lightly greased 9x9-inch pan. Use your fingers or the back of a spatula to flatten it into an even layer.
-
Step 4.
Place the pan in the refrigerator to chill the nougat while you prepare the caramel layer.
-
Step 5.
While the nougat chills, melt the caramels in a small saucepan over low heat, stirring frequently, until smooth and fully melted. Once soft, stir in the peanuts until evenly coated.
-
Step 6.
Pour the caramel-peanut mixture over the chilled nougat in the pan, spreading it evenly with a spatula. Return the pan to the refrigerator and let it cool until the caramel is firm, about 30 minutes to 1 hour.
-
Step 7.
While the caramel layer firms up, melt the chocolate in a double boiler over low heat or in a microwave-safe bowl on high for 2 minutes, stirring halfway through, until completely smooth. Set aside to cool slightly but keep it fluid.
-
Step 8.
Once the mixture in the pan is firm, remove it from the refrigerator and cut it into 2x1-inch sections. Use a sharp knife and wipe it clean between cuts for neat pieces.
-
Step 9.
Set each chunk on a fork and dip it into the melted chocolate, turning to coat completely. Tap the fork against the side of the bowl or pan to knock off any excess chocolate.
-
Step 10.
Place the chocolate-covered chunks on waxed paper to cool and set at room temperature, or refrigerate for quicker cooling. Once the chocolate is firm, the candy is ready to serve.
