Step 1.
Preheat an electric griddle to 275°F and let it come up to temperature. While it heats, break apart the sausage into small pieces and dice the onions. Once the griddle is hot, add the sausage and onions and stir-fry, breaking up the sausage with a spatula, until the sausage is browned and the onions are softened, about 5 to 7 minutes.
-
Step 2.
Add about 1/4 can of diced green chilies and an equal amount of diced tomatoes to the griddle. Continue to stir-fry for about 1 minute, until the vegetables are heated through and well combined with the sausage and onions.
-
Step 3.
Pour the scrambled eggs onto the griddle and mix them with the sausage, onions, peppers, and tomatoes. Do not add salt or pepper. Stir-fry, scraping and folding the eggs, until they are fully cooked and no longer runny, about 3 to 5 minutes.
-
Step 4.
While the eggs finish cooking, microwave the tortillas for 20 to 30 seconds, just until they are slightly warm and softened. Keep them covered with a clean kitchen towel so they stay pliable.
-
Step 5.
Put 1/4 of the cooked egg-sausage mixture down the middle of each tortilla. Add two cheese halves evenly spaced lengthwise over the filling. Fold the tortilla 1/3 of the way up, then fold again crosswise 1/3 of the way in, and again to complete the burrito, tucking the ends as you roll.
-
Step 6.
Wrap each burrito in a 12x12 sheet of waxed paper. Let them sit for 5 minutes, then microwave each on high for 15 seconds, or until heated through. Serve with picante sauce if desired.
