Step 1.
In a 2 1/2-quart bowl, dissolve the yeast in the warm water and let it stand for about 5 minutes until foamy. Add the milk, salt, eggs, shortening, and 2 cups of the flour. Beat on low speed with an electric mixer, scraping the bowl constantly, for 30 seconds. Then increase to medium speed and beat for 2 minutes, scraping the bowl occasionally.
-
Step 2.
Stir in the remaining flour by hand until the dough is smooth and slightly sticky. Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm place until doubled in size, 50 to 60 minutes. The dough is ready when an indentation remains after you lightly touch it.
-
Step 3.
While the dough rises, prepare the creamy glaze: In a small saucepan, melt the butter over low heat. Remove from heat and stir in the powdered sugar and vanilla until smooth. Add hot water, 1 tablespoon at a time, stirring until the glaze reaches a pourable but thick consistency. Set aside.
-
Step 4.
Also prepare the chocolate glaze: In a small saucepan, combine the butter and chocolate and heat over low heat, stirring constantly, until the chocolate is melted. Remove from heat and stir in the powdered sugar and vanilla until smooth. Add hot water, 1 tablespoon at a time, until the glaze is smooth and spreadable. Set aside.
-
Step 5.
Turn the risen dough out onto a floured surface and roll it around lightly to coat with flour. With a floured rolling pin, gently roll the dough to 1/2-inch thickness. Cut with a floured doughnut cutter, dipping the cutter in flour as needed to prevent sticking. Place the cut doughnuts on a lightly floured baking sheet, cover, and let rise until doubled, 30 to 40 minutes.
-
Step 6.
While the doughnuts rise, heat vegetable oil in a deep fryer to 350°F. Use a thermometer to maintain the temperature. Gently slide a few doughnuts into the hot oil using a wide spatula, being careful not to splash. They will sink and then rise to the surface. Turn them as they rise and fry until golden brown, about 1 minute per side. Remove carefully with a slotted spoon or spatula, without piercing the surface, and drain on paper towels. Repeat with remaining doughnuts.
-
Step 7.
Dip the slightly cooled doughnuts into the creamy glaze, turning to coat evenly. Place them on a wire rack set over a baking sheet to catch drips. Let them sit for a few minutes until the glaze is slightly set, then spread the chocolate glaze on top. If desired, dip in sprinkles or other toppings immediately after applying the chocolate glaze. Allow the glazes to set before serving.
