Let's Cook

  1. Step 1.

Place the chicken pieces in a bowl or container and cover with salted water. Let them soak for 30 minutes at room temperature; this helps season the meat and keep it moist. While the chicken soaks, prepare the coating station.

  2. Step 2.

In a shallow bowl, whisk together the egg and milk until well combined. In a separate shallow bowl or plate, mix the flour, Accent, salt, and pepper until evenly distributed. Set both bowls near your cooking area.

  3. Step 3.

If using a deep fryer, preheat it to 350°F. If pan-frying, pour 3/4 inch of oil into a large skillet and set it over medium heat; allow the oil to come up to temperature while you coat the chicken.

  4. Step 4.

After the chicken has soaked for 30 minutes, remove each piece and pat it completely dry with paper towels. Dry chicken ensures the coating adheres properly and the skin crisps.

  5. Step 5.

Working with one piece at a time, dredge the chicken in the flour mixture, turning to coat all sides. Then dip it into the egg-milk mixture, making sure the entire surface is moistened. Finally, return the piece to the flour mixture and press gently so the flour sticks, covering any bare spots. Set the coated piece on a plate or wire rack and repeat with the remaining chicken.

  6. Step 6.

If using a deep fryer, carefully lower a few coated pieces into the hot oil (do not overcrowd). Cover the fryer and fry for about 20 minutes, turning the pieces occasionally with tongs, until the coating is deep golden brown and the chicken is cooked through. If pan-frying, place a few pieces in the skillet, cover, and cook for about 30 minutes, turning occasionally, until browned and cooked through. Adjust the heat as needed to maintain a steady sizzle without burning.

  7. Step 7.

To check doneness, remove a large piece and cut into the thickest part; the juices should run clear and the meat should be opaque all the way to the bone. If not done, continue cooking for a few more minutes and check again.

  8. Step 8.

When the chicken is fully cooked, transfer the pieces to a plate lined with paper towels to drain excess oil. Let them rest for a few minutes before serving.
