Step 1.
Wash the chicken wings under cold running water, then pat them dry with paper towels. Remove the wing tips and discard or save for stock. Cut the remaining wing into two pieces at the joint (drumette and flat). Shake off any excess water and set the wings aside.
-
Step 2.
In a shallow bowl, crack the eggs and add the milk. Whisk until well combined to create an egg wash. Set aside.
-
Step 3.
In a small bowl, mix together the BBQ sauce and honey until smooth. Set aside.
-
Step 4.
Place the flour in a large resealable plastic bag. Add a few wings at a time to the bag, seal, and shake to lightly coat. Remove the wings and dip them in the egg wash, turning to coat completely. Return the wings to the bag and shake again to coat heavily with flour. Repeat the egg wash and flour coating 2-3 times per wing, building up a thick layer so the BBQ sauce will adhere. Set the coated wings on a plate or wire rack.
-
Step 5.
Heat oil in a large skillet or deep fryer to 350°F (175°C). Carefully lower the coated wings into the hot oil in batches, being careful not to overcrowd. Fry until golden brown and cooked through, about 8-10 minutes, turning occasionally for even browning. Remove with tongs or a slotted spoon and drain on paper towels.
-
Step 6.
While the wings fry, preheat the oven to 325°F (165°C). Grease a baking sheet with nonstick spray or oil.
-
Step 7.
Dip each fried wing into the BBQ sauce mixture, turning to coat evenly. Place the coated wings on the greased baking sheet, making sure they don't touch each other. Bake for 15-20 minutes, until the sauce is set and the wings no longer look shiny. Serve hot.
