Step 1.
Preheat your oven to 450 degrees F (230 degrees C) and position a rack in the center. If you have a baking sheet, line it with parchment paper or lightly grease it; set aside.
-
Step 2.
In a large mixing bowl, combine all of the ingredients (the flour, leavening, salt, and any fat or liquid called for) and stir with a sturdy spoon or your hands until a shaggy dough forms and no dry flour remains.
-
Step 3.
Turn the dough out onto a clean, lightly floured work surface and knead it by hand until it becomes smooth and elastic, about 5 to 8 minutes. If the dough feels sticky, sprinkle a little more flour over it and continue kneading.
-
Step 4.
Lightly flour your hands to prevent sticking, then pat the dough flat into an even round or rectangle about 3/4-inch thick. If you prefer, place the dough on a sheet of waxed paper and pat it out there for easier transfer.
-
Step 5.
Using a biscuit cutter or a floured drinking glass, cut out biscuits by pressing straight down without twisting. Gather any scraps, pat them together gently, and cut out more biscuits until all the dough is used; you should get about 18 biscuits.
-
Step 6.
Arrange the cut biscuits on the prepared baking sheet, spacing them about 1 inch apart so they have room to rise. If you want softer sides, place them closer together so they touch.
-
Step 7.
Bake in the preheated 450 degrees F oven for 12 minutes, or until the biscuits are puffed and golden brown on top. Rotate the pan halfway through if your oven bakes unevenly.
-
Step 8.
Remove the biscuits from the oven and let them cool on the baking sheet for 2 to 3 minutes before transferring to a wire rack or serving warm. They are best enjoyed fresh, but leftovers can be stored in an airtight container for up to 2 days.
