Let's Cook

  1. Step 1.

In a heavy saucepan, combine the salt, pepper, paprika, garlic salt, and cinnamon. Add the remaining sauce ingredients as listed, then place the saucepan over medium-high heat and bring the mixture to a boil, stirring constantly to prevent scorching. This should take about 4 to 5 minutes.

  2. Step 2.

Once boiling, reduce the heat to low and continue stirring constantly for about 3 to 5 minutes, making sure the sugar is completely dissolved and the mixture is smooth. You should no longer feel any gritty texture when you rub a drop between your fingers.

  3. Step 3.

Turn the heat to the lowest possible setting and allow the sauce to cook uncovered without stirring for 15 minutes. During this time, the sauce will thicken slightly and the flavors will meld; do not stir, but you may occasionally swirl the pan if needed to prevent sticking.

  4. Step 4.

While the sauce simmers, if you plan to use it as a basting sauce for ribs or chicken during baking, transfer it to the top of a double boiler set over simmering water to keep it warm and fluid. Otherwise, let the sauce cool completely, then transfer to a covered container and refrigerate for up to 30 days. The sauce also freezes well for longer storage.
