Step 1.
Place the beef in a large skillet over low heat. Using a wooden spoon, chop and stir the meat continuously, breaking it into very fine, smooth pieces, and cook until it is fully browned, about 8 to 10 minutes. The beef should be crumbly with no large chunks.
-
Step 2.
Once the beef is browned, carefully drain off the excess fat from the skillet, tilting the pan and spooning out the fat, or using a turkey baster. Keep the browned beef in the skillet.
-
Step 3.
Add the refried beans to the skillet with the beef. Using the wooden spoon, smash the beans into the beef mixture, stirring and pressing until the mixture is smooth and well combined. This should take about 2 to 3 minutes over low heat.
-
Step 4.
Stir in the salt, chili powder, and taco sauce. Mix well until the seasonings are evenly distributed. Remove the skillet from the heat and set the beef mixture aside.
-
Step 5.
In another skillet, pour oil to a depth of about 1/4 inch. Heat over medium-high heat until the oil is hot, about 350°F (175°C). To test, drop a small piece of corn tortilla into the oil; it should bubble vigorously and rise to the surface. Adjust heat as needed.
-
Step 6.
While the oil heats, spread about 2 tablespoons (or 1/2 of the beef mixture divided evenly) onto the center of each corn tortilla. Fold the tortilla over and press gently so the beef filling acts as an adhesive and holds the sides together.
-
Step 7.
Carefully place each folded taco into the hot oil, working in batches to avoid crowding. Fry on both sides until crispy and golden brown, about 1 to 2 minutes per side. Use tongs to turn them gently.
-
Step 8.
When the tacos are crispy, remove them from the oil and place them on a wire rack or paper towels to drain and cool slightly. Let them cool for a minute or two so they are easier to handle.
-
Step 9.
While the tacos cool, prepare the cheese and lettuce. Pry each taco open slightly and insert 1/2 slice of American cheese and some shredded lettuce. Top with additional taco sauce to taste. Serve immediately.
