Step 1.
Preheat an electric griddle to 400°F and let it come fully up to temperature. While it heats, gather your buns, still-frozen beef patty, salt, and all dressing ingredients so you can work quickly once the griddle is hot.
-
Step 2.
Place the bun halves face down on the hot griddle and toast for about 1 minute, until the cut sides are lightly golden and warmed through. Watch closely so they don't burn, then transfer the toasted buns to a plate and set aside.
-
Step 3.
Place the still-frozen beef patty on the hot griddle and cook for 4–5 minutes on the first side without pressing it down. Season the top liberally with salt before flipping.
-
Step 4.
Flip the patty and season the cooked side liberally with salt. Continue cooking for another 4–5 minutes, until the patty is browned, cooked through, and no longer pink in the center.
-
Step 5.
While the patty cooks, dress the top bun: spread half of the pre-made mayo sauce over the cut side, then layer on 1 tablespoon chopped white onion, 2 dill pickle slices, 2 lettuce leaves, and 2 tomato slices.
-
Step 6.
Spread the remaining mayo sauce evenly over the cut side of the bottom bun.
-
Step 7.
When the burger is finished cooking, tilt the griddle or use a spatula to drain off the excess fat. Place the cooked patty onto the dressed top bun, then add the dressed bottom bun on top, sauce side down, to close the burger.
