-
Step 1.
Heat oil in a deep fryer to 375°F. Use enough oil to cover the wings entirely, at least 1 inch deep.
-
Step 2.
While the oil heats, combine the butter, hot sauce, ground pepper, and garlic powder in a small saucepan over low heat. Heat until the butter is melted and the ingredients are well blended, stirring occasionally.
-
Step 3.
In a small bowl, combine the flour, paprika, cayenne powder, and salt.
-
Step 4.
If the wings are frozen, defrost them completely and pat them dry with paper towels.
-
Step 5.
Put the wings in a large bowl and sprinkle the flour mixture over them, tossing to coat each wing evenly.
-
Step 6.
Place the coated wings in the refrigerator for 60 to 90 minutes to help the breading adhere.
-
Step 7.
After chilling, carefully place all the wings in the hot oil. Fry for 10 to 15 minutes, or until some parts of the wings begin to turn dark brown.
-
Step 8.
Remove the wings from the oil and drain on paper towels. Do not let them sit too long, as you want to serve them hot.
-
Step 9.
Quickly transfer the drained wings to a large bowl. Add the hot sauce and stir to coat all the wings evenly.
-
Step 10.
Serve immediately with bleu cheese dressing and celery sticks on the side.
