Let's Cook

  1. Step 1.

Heat a heavy iron skillet over medium heat and add enough oil to coat the bottom. Once the oil shimmers, add the chopped onion, bell pepper, and celery. Sauté, stirring occasionally, until the vegetables are soft and translucent, about 5 to 7 minutes.

  2. Step 2.

While the vegetables are sautéing, preheat the oven to 350°F (175°C).

  3. Step 3.

Add the potatoes to the skillet with the softened vegetables, then add the ham. Cook, stirring often, until the potatoes and ham are lightly browned and the potatoes begin to soften, about 8 to 10 minutes. Season with salt and pepper to taste, then stir in half of the parsley.

  4. Step 4.

Pour the milk over the mixture in the skillet. Bring to a boil over medium-high heat, then immediately reduce the heat to a simmer.

  5. Step 5.

Cover the skillet tightly with foil. Carefully transfer it to the preheated oven and bake for 15 minutes, until the potatoes are tender and the flavors meld.

  6. Step 6.

Remove the foil and continue baking for a few more minutes, until the top is browned and the liquid has slightly reduced. Keep an eye on it to prevent burning.

  7. Step 7.

Remove the skillet from the oven and sprinkle the remaining parsley over the top before serving.
