Let's Cook

  1. Step 1.

Place the water, yeast, and a pinch of sugar in the bread machine pan and let stand for a couple of minutes to activate the yeast. Add the remaining ingredients in the order given, then set the machine to 'dough' mode and start the cycle.

  2. Step 2.

When the dough cycle is complete, remove the dough from the machine and gently deflate it by pressing down with your hands. Divide the dough into 8-10 equal portions, cover them with a clean tea towel, and let rest for 5 minutes to relax the gluten.

  3. Step 3.

While the dough portions rest, line a baking sheet with parchment paper. After resting, shape each portion into a smooth ball by cupping your hand and rolling it on a lightly floured surface, then place the balls evenly spaced on the prepared baking sheet.

  4. Step 4.

Insert the entire baking sheet into a large plastic bag (like a garbage bag) and allow the rolls to rise until quite puffy, about 20-30 minutes. While they rise, preheat the oven to 375°F (190°C).

  5. Step 5.

Remove the baking sheet from the plastic bag. Gently flatten each roll with the palm of your hand. If desired, brush the tops with milk and sprinkle with sesame seeds.

  6. Step 6.

Bake in the preheated 375°F oven until nicely browned, 15-20 minutes. Let cool on the baking sheet for a few minutes, then transfer to a wire rack. Freeze any leftovers.
