-
Step 1.
In a small bowl, pour the boiling water over the bulgur wheat, ensuring it is fully submerged. Let it sit at room temperature for about 1 hour, during which the wheat will absorb the water and swell to about double in size.
-
Step 2.
While the bulgur soaks, prepare the vegetables: steam the quartered mushrooms in a steamer basket over simmering water for about 10 minutes, or until they are tender when pierced with a fork. Remove the mushrooms and set them aside in a bowl, keeping them separate from other ingredients.
-
Step 3.
In the same steamer, steam the onions for about 10 minutes, or until they become translucent and soft. Remove the onions and set them aside separately from the mushrooms.
-
Step 4.
In another small bowl, add 1/2 cup water to the oats and let them soak for about 10 minutes, until softened. After soaking, drain any excess water from both the bulgur wheat and the oats.
-
Step 5.
In a food processor, combine the drained bulgur wheat, soaked oats, steamed mushrooms, rice, cheeses, and spices. Pulse four or five times until the ingredients are chopped fine but not pureed; the mixture should still have some texture.
-
Step 6.
Transfer the pulsed mixture to a large bowl. Add the steamed onions and cornstarch, and mix well with a spoon until evenly combined.
-
Step 7.
Preheat the oven to 300 degrees Fahrenheit. Spray a large skillet with olive oil cooking spray and place it over medium-low heat.
-
Step 8.
Measure 1/2 cup of the patty mixture at a time and place it into the heated skillet. Use the back of a spoon to shape each portion into a 3-inch round patty that is about 1/2 inch thick.
-
Step 9.
Cook the patties for 2 to 4 minutes per side, or until they are light brown on the surface. Adjust the heat if necessary to prevent burning. Work in batches if the skillet is not large enough to hold all patties at once.
-
Step 10.
Once all patties are browned, arrange them on a baking sheet lightly sprayed with olive oil cooking spray. Bake in the preheated oven for 20 to 25 minutes, turning them over halfway through the cooking time, until they are firm and heated through.
-
Step 11.
Allow the patties to cool completely if you plan to freeze them; otherwise, serve warm.
