Let's Cook

  1. Step 1.

Lightly grease a 9" by 13" baking pan with butter or nonstick spray, making sure to coat the bottom and corners so the candy won't stick later.

  2. Step 2.

In a large saucepan, combine the sugar, corn syrup, condensed milk, milk, cream, and butter. Place over medium heat and stir occasionally with a wooden spoon until the mixture comes to a boil; this may take about 5–10 minutes, and you'll see bubbles breaking across the surface.

  3. Step 3.

Once boiling, attach a candy thermometer to the pan and continue stirring continuously. Cook until the thermometer reads 240°F (soft-ball stage); this can take 15–25 minutes, and the mixture will thicken and turn a light caramel color. Keep a close eye on it and adjust the heat if needed to maintain a steady boil without scorching.

  4. Step 4.

Immediately remove the pan from the heat and stir in the vanilla and nuts until evenly distributed. The mixture will be very hot and thick, so work quickly.

  5. Step 5.

Pour the mixture into the prepared baking pan and spread it evenly with a spatula. Allow it to cool completely at room temperature—this may take 1–2 hours—until firm and set.

  6. Step 6.

Once completely cooled, cut the candy into desired serving pieces using a sharp knife. For cleaner cuts, you can lightly grease the knife or wipe it between cuts.

  7. Step 7.

If desired, melt chocolate in a double boiler over simmering water, stirring until smooth. Dip each piece of candy, one at a time, into the melted chocolate, allowing excess to drip off, then place on a wire rack or parchment paper to let the chocolate harden.
