Let's Cook

  1. Step 1.

Place the dried beans in a large pot and add enough cold water to cover them by at least 2 inches. Bring the water to a rolling boil over high heat, then immediately turn off the heat and cover the pot. Let the beans soak in the hot water for 1 hour, then drain them in a colander and discard the soaking liquid.

  2. Step 2.

Return the drained beans to the pot and add fresh water to cover them by about 2 inches. Add all the remaining ingredients (such as onion, garlic, seasonings, and any meats or vegetables) to the pot and stir to combine.

  3. Step 3.

Set the pot over low to medium heat and bring the liquid to a gentle simmer—you want a low boil with small bubbles breaking the surface. Cook uncovered, stirring occasionally, for 2 to 3 hours, or until the beans are tender to your liking. Check the water level every 30 minutes or so; if the beans start to look dry, add more hot water to keep them covered. Start tasting the beans after 2 hours to gauge doneness, and adjust the heat as needed to maintain a steady low boil.
