Let's Cook

  1. Step 1.

In a mixing bowl, whip the softened cream cheese with an electric mixer until it is smooth and spreadable, scraping down the sides of the bowl as needed. Add the powdered sugar and blend well until fully incorporated and creamy. Add the remaining ingredients for the first layer and blend until the mixture is smooth and evenly combined. Spread this cheese mixture evenly into the pie crust to form the bottom layer, smoothing the top with a spatula, then set the pie aside.

  2. Step 2.

In a separate bowl, whisk together the chocolate pudding mix and milk, using about 1/2 cup less milk than the package directions call for so the pudding sets up thicker. Whisk for about 2 minutes until the pudding begins to thicken, then let it stand for a few minutes to firm up slightly. Spoon or pour the thickened pudding over the cream cheese layer in the crust, spreading it evenly to the edges.

  3. Step 3.

Top the pudding layer with a generous layer of Cool Whip, spreading it gently with a spatula to cover the surface without pulling up the pudding. Sprinkle chocolate curls over the top for garnish. Refrigerate the pie for at least 2 to 3 hours, or until fully chilled and set, before slicing and serving.
