Step 1.
Cook the rice according to the package directions, using the specified amount of water and timing for your rice variety. Once tender, fluff it with a fork and keep it covered to stay warm while you prepare the rest of the dish.
-
Step 2.
While the rice cooks, melt butter in a large skillet over medium heat. Add the onions, carrots, and scallions, and sauté, stirring occasionally, until the carrots are translucent and the onions are soft, about 5 to 7 minutes. Transfer the vegetables to a plate and set aside.
-
Step 3.
Meanwhile, preheat the oven to 350°F (175°C). Spread the sesame seeds in a shallow pan and bake, shaking the pan occasionally for even color, until golden brown, 10 to 15 minutes. Remove from the oven and set aside.
-
Step 4.
Lightly grease another skillet with oil or nonstick spray and place it over medium heat. In a bowl, beat the eggs until well blended. Pour the eggs into the hot skillet and cook, stirring gently, as you would scrambled eggs, until just set but still soft. Remove from heat.
-
Step 5.
In a large bowl or the skillet used for the vegetables, combine the cooked rice, sautéed vegetables, toasted sesame seeds, and scrambled eggs. Drizzle with soy sauce and stir gently until everything is evenly mixed. Taste and add salt and pepper as needed. Serve hot.
