-
Step 1.
Place the shaved chocolate flakes and the cherries in separate bowls. Cover each bowl and refrigerate until ready to use, keeping them cold so they don't melt the ice cream when added later.
-
Step 2.
In a mixing bowl, whisk the eggs until light and fluffy, 1 to 2 minutes. They should increase in volume and turn pale yellow.
-
Step 3.
While whisking, gradually add the sugar a little at a time, then continue whisking until completely blended, about 1 minute more. The mixture should be smooth and the sugar mostly dissolved.
-
Step 4.
Pour in the cream and milk and whisk to blend. Make sure everything is evenly combined.
-
Step 5.
Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions. Let the machine run; the mixture will gradually thicken.
-
Step 6.
After the ice cream stiffens (about 2 minutes before it is done), add the chilled chocolate flakes and cherries, then continue freezing until the ice cream is ready. The add-ins should be evenly distributed and the ice cream should hold its shape.
