Step 1.
Heat oven to 350°F. Line 2 baking sheets with parchment paper.

Using an electric mixer, beat peanut butter, brown sugar, egg, and baking soda in a large bowl on medium speed until fully incorporated, about 3 to 5 minutes.

Drop level teaspoonfuls of dough onto the prepared sheets, spacing them 1½ inches apart. Bake until the cookies are puffed and starting to lightly brown around edges, 8 to 10 minutes.

Let cookies cool on baking sheets for 5 minutes before transferring to a cooling rack to cool completely.
