CIYA Shish Kebabs
Juicy beef kebabs with crunchy walnuts, oozing mozzarella, fresh herbs, and crispy tortilla wraps. Grilled and pan-fried for a delicious meal.
Ingredients
- 400 g minced (ground) beef
- 4.93 ml ground cumin
- 29.6 ml olive oil
- 250 ml natural yogurt
- 4 flour tortillas
- 50 g walnuts roughly chopped
- 125 g fresh mozzarella drained and roughly sliced
- 1 parsley leaves finely chopped
- 1 mint leaves finely chopped
- 4 spring onions (scallions) finely sliced
- 4.93 ml sumac
- lemon wedges
- sea salt
- freshly ground black pepper

Prepare
- 50 g walnuts, roughly chopped
- 125 g fresh mozzarella, drained and roughly sliced
- 1 parsley leaves, finely chopped
- 1 mint leaves, finely chopped
- 4 spring onions (scallions), finely sliced

Step 1.
Preheat the grill (broiler) to high. In a large mixing bowl, season the minced beef with a generous pinch of salt and pepper, add the ground cumin, and mix well. Divide the seasoned beef into 8 equal portions, then roll each into a sausage shape about 14 cm (5½ in) long. Brush the kebabs lightly with olive oil.

Step 2.
Place the kebabs under the hot grill and cook for 3–4 minutes on each side, until they are just turning golden brown and cooked through. While the kebabs cook, prepare the tortillas.

Step 3.
Place 1 tablespoon of yogurt in the center of each tortilla and spread it out with the back of a spoon. Sprinkle a quarter of the chopped walnuts, mozzarella slices, parsley, mint, and spring onions over each tortilla. Season each with a pinch of sumac, salt, and pepper.

Step 4.
Once the kebabs are cooked, place two kebabs on each tortilla. Roll the tortilla up tightly, tucking in the sides as you go, to form a wrap.

Heat the olive oil in a frying pan or skillet over medium heat. Fry the wrapped kebabs for 1 minute on each side, until golden brown and crispy. Slice each kebab in half and serve immediately with the remaining yogurt, a sprinkle of sumac, and lemon wedges for squeezing.
