Citrus Granita

- 1 ½ cups water
- ½ cup sugar
- Zest of 1 lemon, lime, or pink grapefruit, removed in wide strips with a vegetable peeler
- ½ cup fresh lemon, lime, or pink grapefruit juice

Step 1.
Combine in a small saucepan: 1 ½ cups water; ½ cup sugar; Zest of 1 lemon, lime, or pink grapefruit, removed in wide strips with a vegetable peeler

Bring to a boil over medium heat, stirring occasionally to dissolve the sugar, then cover and boil 5 minutes without stirring. Remove the pan from the heat and let steep for 15 minutes.

Strain into a medium bowl; discard the zest. Let cool to room temperature, then stir in: ½ cup fresh lemon, lime, or pink grapefruit juice

Refrigerate until cold or quick-chill in an ice water bath. Freeze as described in Berry Granita.
