Gather these ingredients - no prep needed yet.

  • Kosher salt and pepper
  • 4 6-ounce boneless, skinless chicken breasts

Prepare

  • Halve 473 ml grape tomatoes
  • 2 clove garlic, pressed
  • 19.7 ml olive oil, divided
  • Halve 227 g fresh mozzarella balls
  • 118 ml fresh basil, torn

Let's Cook

  1. Step 1.

    In a bowl, toss the halved grape tomatoes with the pressed garlic, 2 teaspoons olive oil, and a pinch each of salt and pepper. Set aside.

  2. Step 2.

    Preheat the air fryer to 400°F. Place the seasoned tomatoes in the air fryer basket and cook until tender and some burst, about 3 to 4 minutes. Remove the tomatoes from the basket and transfer to a bowl; set aside.

  3. Step 3.

    Brush the chicken breasts with the remaining 2 teaspoons olive oil and sprinkle with ¼ teaspoon each salt and pepper. Place the chicken in the air fryer basket and cook at 400°F until cooked through, about 5 to 6 minutes. Transfer the cooked chicken to plates.

  4. Step 4.

    While the chicken is cooking, fold the halved fresh mozzarella balls and torn basil into the reserved tomatoes. Spoon the tomato-mozzarella mixture over the chicken and serve.
