A classic dessert of sweet cherries simmered in sugar and liquor, flambéed for drama, and served over crêpes, ice cream, or cheesecake.

- ½ pound Bing or other sweet cherries, pitted and halved
- ¼ cup sugar
- ¼ cup brandy, bourbon, or white rum
- 2 tablespoons kirsch
- 1 Sweet Crêpes, vanilla ice cream, or any cheesecake (opens in new tab)

- ½ pound Bing or other sweet cherries, pitted and halved
- ¼ cup sugar
- ¼ cup brandy, bourbon, or white rum
- 2 tablespoons kirsch
- 1 Sweet Crêpes, vanilla ice cream, or any cheesecake

Heat in a small saucepan over medium heat: ½ pound Bing or other sweet cherries, pitted and halved; ¼ cup sugar

Cook, stirring, until the sugar is dissolved and the cherries exude enough juice to create a sauce. Add: ¼ cup brandy, bourbon, or white rum

Step 3.
Heat until the liquor is warm, then carefully ignite it with a long wooden match or lighter. When the flames have died down, add: 2 tablespoons kirsch

Serve hot on or with: Sweet Crêpes, vanilla ice cream, or any cheesecake
