  • 4 cups (500g) all-purpose flour
  • 4 teaspoons baking powder
  • ¾ teaspoon ground cinnamon
  • (¾ teaspoon grated or ground nutmeg)
  • ¾ teaspoon salt
  • 2 large eggs
  • 1 cup (200g) sugar
  • 1 cup (235g) milk
  • 5 tablespoons (70g) unsalted butter, melted
  • 1 teaspoon vanilla
  • 3 inches vegetable oil or shortening
  • 1

Gather these ingredients - no prep needed yet.

  • 4 cups (500g) all-purpose flour
  • 4 teaspoons baking powder

  • 2 large eggs
  • 1 cup (200g) sugar
  • 1 cup (235g) milk
  • 5 tablespoons (70g) unsalted butter, melted
  • 1 teaspoon vanilla
  • 3 inches vegetable oil or shortening
  • 1 Flavored Sugars
  • Any icing or glaze

Let's Cook

  1. Step 1.

    Whisk together in a medium bowl until thoroughly mixed: 4 cups (500g) all-purpose flour; 4 teaspoons baking powder; ¾ teaspoon ground cinnamon; (¾ teaspoon grated or ground nutmeg); ¾ teaspoon salt

  2. Step 2.

    Beat well in a large bowl with an electric mixer: 2 large eggs

  3. Step 3.

    Add slowly and beat until thick and creamy: 1 cup (200g) sugar

  4. Step 4.

    On low speed, add and beat until blended: 1 cup (235g) milk; 5 tablespoons (70g) unsalted butter, melted; 1 teaspoon vanilla

  5. Step 5.

    Mix the wet ingredients into the flour mixture with a spoon just until blended. The dough will be soft and sticky. Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours and up to 24 hours.

  6. Step 6.

    Roll out the dough on a lightly floured surface to ½ inch thick and cut out the doughnuts. Let them rest, loosely covered with oiled plastic wrap, for 30 minutes.

  7. Step 7.

    Heat to 365°F in a deep-fryer, deep heavy pot, or Dutch oven: 3 inches vegetable oil or shortening

  8. Step 8.

    Fry in batches, flipping halfway through, until golden, about 4 minutes. Drain briefly on a baking sheet lined with paper towels, turning them to blot fat from the second side. While still warm, toss in a bowl with: Flavored Sugars

  9. Step 9.

    Or let cool and glaze with: Any icing or glaze
