Cajun Blooming Onions
Crispy deep-fried sweet onions with a spicy Cajun kick, served with a creamy horseradish dipping sauce. Perfect as a party appetizer or side dish.

Step 1.
In a small bowl, combine ¾ cup mayonnaise, ½ cup sour cream, 4½ tablespoons ketchup, 4½ tablespoons creamy horseradish, 2 tablespoons Dijon mustard, 2 teaspoons lemon juice, 2 teaspoons Cajun seasoning, 1½ teaspoons paprika, and 1 teaspoon Tabasco. Stir until well combined. Set aside.

Step 2.
In a large mixing bowl, whisk 2 large eggs and 1 cup whole milk until smooth. In another large mixing bowl, whisk together 2 cups all-purpose flour, 2½ teaspoons Cajun seasoning, 2 teaspoons garlic powder, 2 teaspoons onion powder, 2 teaspoons seasoning salt, and 1 teaspoon black pepper. Set both bowls aside.

Step 3.
Peel 3 medium sweet onions and trim off the tops. Hold an onion trimmed side down. Starting from the top, make a vertical cut through the center three-fourths of the way down, keeping the bottom intact. Repeat cuts all around the top every ¼ inch to create petals. Repeat with remaining onions.

Step 4.
Fan out the petals of each onion. Coat each onion first with the seasoned flour mixture, then dip into the egg mixture, then coat again with the seasoned flour until nicely coated.

Step 5.
Pour 3 to 4 inches of vegetable oil into a large pot. Heat over medium-high heat until the oil reaches 350°F, or until it shimmers and dances across the top.

Deep-fry the onions, flipping once, until golden brown, about 7 minutes. Remove from oil and place on a paper-towel-lined plate. Let cool until safe to eat, then serve with the sauce.
